Is it just me or is that thing pitch shifting every sustained note? Sounds totally out of tune of the song.

That "pitch shifting thing" is the whammy bar. While it makes no sense musically to use the whammy on every sustained note, in the game using the whammy bar on certain (but not all) sustained notes helps you gain more star power (or overdrive in Rock Band) which in turn let's you increase your score multiplier and acheive a higher score.

Regardless, even this machine can not beat a real human being. Here is the current world record holder, as proclaimed by the Guinness Book of World records, FC'ing TTFATF. his reaction at the end when he realizes what he's just done is priceless. Note that this video is not the one for which he holds the world record because Guinness was not present, but this performance is actually better than his world record performance.
